6 large sea scallops
Salt and freshly ground black pepper
2 tablespoons olive oil
2 tablespoons unsalted butter
2 cloves garlic, minced
1-2 tablespoons truffle oil
Lemon wedges, for serving
Fresh chopped parsley, for garnish
Prepare the scallops: Pat the scallops dry with a paper towel and season them on both sides with salt and pepper.
Sear the scallops: Heat the olive oil in a large pan over high heat. Once the oil is hot, add the scallops, ensuring they are not touching each other. Sear the scallops for about 1-2 minutes on each side, until they're golden brown and cooked through.
Make the garlic butter: Reduce the heat to medium and add the butter and minced garlic to the pan. Sauté the garlic until it's fragrant.
Baste the scallops: Spoon the garlic butter over the scallops, continuing to baste them for about 1 minute.
Add the truffle oil: Remove the pan from the heat and drizzle the truffle oil over the scallops.
